Feta & Pea Fritters

These Feta & Pea Fritters are so tasty, the ingredients take minutes to mix and a few minutes to cook. If you don’t want to use egg rings, feel free to just scoop onto the pan for a more rustic look.

Feta & Pea Fritters

Ingredients
Cooked Garden Peas – 350g
Large Egg2
Phil Vickery Seriously Good Gluten Free Batter140g
Whole Milk – 100g
Chopped Spring Onion – 50g
Crumbled Feta100g
Chopped Fresh Mint – 5g

Method:
1. Add all ingredients to a bowl and mix into a batter.
2. Refrigerate until ready to use.
3. To a frying pan or griddle scoop into oiled egg rings and cook for 2-3 minutes on each side.
4. Serve.

Serving Suggestion: Why not serve this this with a tomato chutney or a tomato salad. The tomato really works with the salty feta cheese.
