Since Nick has joined his Dad as partner at Miller’s it is a real family affair. “It’s usual to see Dad frying, Mum in the restaurant and I ‘m everywhere from prepping to front of house. I love all aspects of working in the chippy, it’s good fun and the customers enjoy seeing us having fun and remark on the happy atmosphere.”
At the end of last year Miller’s underwent a re-brand and refurb. Nick explains: “During the rebrand, we decided to strip everything back and look at all aspects from the look of the chippy, the packaging and the menu. We wanted everything to be the best that we could possibly offer. This was when we decided the time was right to think about using a new batter without any artificial flavourings. We tried everything on the market and learnt a lot as we went through the process. We discovered Ceres | Natural Batter Mix and we loved it! We found it very easy to work with. It produces a consistent product every time. Obviously during busy times we are making more batter so it was very important that the batter was reliable and consistent. When we used to make our own batter from scratch, there were issues sometimes because we couldn’t guarantee consistent results.”

“We offer Gluten Free fish and chips every day as we have a dedicated prep area and fryer for Gluten Free Fish & Chips. We are the only shop around offering Gluten Free every day and people travel from the other end of the city to enjoy it. We started offering Gluten Free fish and chips and were surprised to find that we have attracted extra customers in addition to those following a Gluten Free diet. The Gluten Free fish and chips also appeals to vegetarians, as we only cook in vegetable oil and it also meets the dietary requirements of the Halal community. On a personal level, I get a great deal of satisfaction when I hear people saying that they haven’t been able to eat fish and chips for 10 years due to gluten intolerance and then they discover our Gluten Free version and love it!” For us there was only one Gluten Free Batter to use, after testing the Seriously Good Gluten Free Batter we didn’t have to look anywhere else.
“This is BRILLIANT! We have sold so many more fishcakes since using Ceres | Fishcake mix. It is so simple to use. We add cod and haddock to the mix and it tastes very good. It is a great product, gives us a very good margin and by using fish trimmings we save on wastage too. It is amazing how fast we can make a batch of homemade fishcakes and the mix is so versatile.
Nick believes in pushing forward with new plans “We have a new restaurant with table service, fully licensed and WIFI. We have a Bistro Night on Thursday nights open from 6-9pm. We cater for 20 covers and the menu has a selection of fish dishes including home-made fish soup, mussels in garlic white sauce and mains including Prawn & Courgette Linguini and Cajun Salmon Fillet. All home cooked from scratch thanks to James J. Workman our award winning chef. It is going very well and we hope to expand.”

“We have a new young and energetic staff which works amazingly as a team. We are enjoying the challenge of entering the Fish and Chip Awards, we are the under dogs but the team has got behind it and are all working towards a common goal. It is the first time we have entered and we are excited to be in the Top 10 Fish and Chip Shops in the UK. It is a good benchmark to work towards and recognition for all our hard work.”
