WASH, WASH, WASH, SOAK. It may sound time-consuming but washing at least three times will give you a very clean batch of peas, and soaking for 36 hours in the fridge will provide you with fully swollen peas.

Choose the best marrowfat pea you can get, for what it costs pay the extra. If it gives you a better end product, then it’s a small price to pay over the hundreds of portions or so you will get from a bag of dried peas.

Make sure you add enough water to the saucepan for cooking. If there isn’t enough, peas will not break down as readily as you would like. By this point, they will start to lose their colour.
