This recipe makes a light and tasty snack. The feta works brilliantly – just be sure to crumble it up – however, the real star of the show is the mint. Don’t be shy, be sure to add plenty.

Why not serve with lovely tomato chutney or a fresh tomato salad?

  • Add the Ceres Fishcake mix, eggs, milk, crumbled feta, chopped mint and oregano, and bring it all together until you have a nice consistent mixture.
  • Leave the mix in the fridge for two hours; overnight would be best.
  • Portion up, roll in seasoned rice flour, batter or breadcrumb, fry and serve.
