Gluten, Free, Banana, Chocolate, Pancakes, Gluten Free, Ceres Gluten Free Batter Mix

These Banana and Chocolate Pancakes are great for pancake day or brunch and you can use all milk chocolate or whatever your favourite chocolate is. What’s great about this recipe is that it is gluten free, but if you don’t have anyone with allergies or intolerances just swap out the Ceres Gluten Free Batter Mix for Ceres Natural Batter Mix.

Be sure to use ripe bananas, they play a pivotal role in providing that creamy texture but also that sweetness.

  • Add the Ceres Gluten Free Batter Mix and baking powder into a large bowl. In a separate mixing bowl, mash the very ripe bananas with a fork until smooth, then whisk in the eggs and milk. Make a well in the centre of the dry ingredients, tip in the wet ingredients and swiftly whisk together to create a smooth, silky batter.
  • Heat a knob of butter in a large non-stick pan over a medium heat. Add 3-4tbsp of the batter to the pan and cook for several minutes, or until small bubbles start appearing on the surface. Flip the pancake over and cook for 1-2 minutes on the other side. Repeat with the remaining batter.
  • Stack the pancakes on plates and top with the banana slices, a glug of sticky maple syrup and, if you wish, a handful of your favourite nuts.
