With many fish and chip operators frying chips in baskets these days, we get a lot of messages from people asking us how to clean the baskets. It might seem like a simple issue, but as always, attention to detail will help everyone create better fish and chips. This method would also work for frying utensils.

If you are not sure what to do, our steps below teach you how to clean a deep fryer basket using materials in your kitchen.

It is best to make this a regular part of your cleaning schedule; it will make the job a whole lot easier. Best not let oil bake on especially if you use a liquid oil as that is prone to polymerisation.

What you will need:

➡️ Warm water

➡️ Paper towel

➡️ Sponge or soft-bristle scrub brush

➡️ Dish soap

➡️ Vinegar (if needed)

➡️ Bicarbonate of soda (if needed)

➡️ Oil, fat and frying stains can be stubborn to remove. Using dish soap works wonders when cleaning a fryer basket. Here are the steps you need to take.

➡️ Place the basket in a bucket of warm water, and let it soak for about a minute or two. You also can put the basket in your sink and rinse it with warm water.

➡️ Vinegar and warm water are especially helpful if the basket is caked with grease. Add a tablespoon or two of vinegar into warm water and let a basket soak for about 15 minutes. Be sure the basket is fully submerged in the solution.

➡️ Using the soap and your sponge or soft-bristle brush, scrub the base and interior walls of the fryer basket. Also, scrub the basket’s exterior. Make sure to pay extra attention to the spots where the most oil and food particles are gathered.

➡️ Once the basket is lathered up, give it a rinse with warm water. If you notice any remaining grease or remnants, scrub those areas of the basket again using more dish soap or about a tablespoon of Bicarbonate of soda. Rinse again after you re-clean these spots.

➡️ Placing a wet basket into oil does not bode well. Lay down some paper towels, and set the basket down so it can air dry. Wipe off remaining wet spots with a paper towel thoroughly to make sure it’s completely dry.

➡️ It is best to do this at the end of the shift so they can dry naturally overnight.

If you have a commercial dishwasher then ignore the above and pop them in after every shift, this will keep them in tip-top condition.

Note – You must rinse properly, any remnants of soap or Bicarbonate of soda will start breaking down your oils.
