HOW TO MAKE CERES CURRY SAUCE

If you look online, people love curry sauce—especially a curry sauce from a chip shop. There are many variations of the curry sauce, but they mostly fall under chip shop or Chinese curry sauce. 

The Ceres curry sauce is a proper curry sauce for chip shops of today; it is made with an abundance of cumin, Curry, onion powder, tomato, turmeric and a touch of chilli.

On our travels, we notice that operators like to make it in different ways, but we always have a base recipe that we recommend, but in this article, we will help you with an alternative method too. 

Hob (Recommended)

In our view, making Curry this way is the best way for volume, but also it is the most efficient way of getting all the essential oils from the herbs and spices to release. On top of this, the natural starches that thicken the Curry will expand fully and consistently on the hob.

Method

  • Set 6 litres of water on the hob, bring to a simmer.
  • Add 1 litre and 1kg of Ceres Curry Sauce Mix and stir well.
  • Add mixture to simmering water and stir; cook for 3-4 minutes.
  • You can either serve right away in a bain-marie or let it cool and refrigerate it when doing this method.
  • When you need it, you can microwave or warm it on hob gently until it reaches 75c (82c Scotland).
  • If you have stored it in the fridge, you may need to add a little water to loosen it as the natural starches thicken when cooling.

Microwave

If you want to use the microwave, then here is a recipe that should work. We don’t recommend it because raw spices don’t fare well in the microwave and the natural starches expand at different rates.

Method:

  • Add 500ml of cold water to a bowl, add Ceres Curry Sauce Mix, and stir well.
  • Stir in 3 litres of hot water.
  • Pop into the microwave for three minutes and stir; repeat this process every three minutes for 12 minutes.
  • If Curry is not as thick as you would like, give it another three minutes.
  • Serve right away, do not refrigerate

These methods will give your customers a great tasting curry sauce they expect from a chip shop, but even better it’s loaded with lots of great herbs and spices. 

Now all you have to think about is do you pour over chips or serve in a pot.
