To turn mushy peas into fritters you need to chill them overnight in the fridge, peas have a high amount of resistant starch, and as you may have observed when you chill cooked mushy peas, they stiffen up nicely. This will allow you to scoop them and press them into cores for battering or breading.

If you want to pane them in advance, then you can flour, egg dip and breadcrumb. You can blanch them also for 1 minute at 170C to set the breadcrumb and remove the moisture from the coating. After cooling, you can chill or freeze.

Keep in mind if your cores are too thick, they will need too long to fry so you may have to microwave to thaw the middle a little before frying.

If you left them uncoated, then you can pane or batter just before frying, if you have some pre-coated in the fridge or freezer you can now deep fry until internal temp is 70c.
