Nashville Fried Chicken

Nashville hot chicken is fried chicken, but with a fiery difference. The perfectly fried chicken is tossed in a spicy sauce with a generous amount of cayenne and black pepper.

Want it hotter? Just boost the cayenne and black pepper to increase the heat!

Traditionally, Nashville hot chicken is served with sliced white bread and pickles. Why not make a meal by adding a side of chips, coleslaw, sour cream and chive dip?


For the Nashville Fried Chicken

Chicken cut into 8, 9 or 102kg
Tabasco1 Tablespoon
Franks Hot Sauce4 Tablespoons + more for tossing.
Alpha Coateras needed for marinade and coating.
Liquid Oilas needed

For the Nashville Hot Sauce

Cayenne Pepper1 Tablespoons
Brown Sugar2 Tablespoon
Ground Black Pepper1 Teaspoon
Garlic Granules1 Tablespoon
Tabasco1 Tablespoon
Frank's Hot Sauce4 Tablespoons
Rice Vinegar4 Tablespoons
Salt1 Teaspoon
Liquid Oil (reserved from the used cooking oil)100ml


  • Mix the buttermilk, Tabasco, Frank’s Hot Sauce, 50g Alpha Coater and the chicken and leave overnight in the fridge, or at least for a minimum of two hours.
  • Drain the chicken pieces and dredge in the Alpha Coater.
  • Add all the Nashville hot sauce ingredients to a saucepan and simmer for 4-5 minutes until the sauce is nice and smooth.
  • When you are ready to cook, preheat the fryer to 170°C.
  • Deep fry until above 75°C or until crisp, golden-brown and cooked.
  • Remove, drain and toss into the Nashville hot sauce and serve.
