Absolutely love steak, especially rib eye steak.

The Pass in Horsham. I found it incredible, Such attention to detail.
Who would you love to serve in your shop & why?
Marco Pierre White what a legend and knowing he loves Fish & Chips makes him even cooler.
What is your favourite book?
I don’t read much. But I very much liked Setting the Table by Danny Meyer, especially when he explains the “salt shaker theory.”
What item will you not leave for work without & why?
My iPhone as I listen to podcasts every day, especially when doing preparation or travelling to work.
Favourite Fish & Chip Shop?
Rick Steins in Padstow has probably the most incredible view ever; the food was lovely too.
Who do you look up to in the industry?
I have to take my hat off to Fred Capel from Chez Fred, James Ritchie from Simpsons and Mark Drummond from Towngate Fisheries. At some point, they have all been instrumental in my business.
What quote or saying do people spout but is complete BS?
Don’t take this personally.
What’s the most interesting thing you’ve seen this week?
A documentary about Ido Portal, very good.

Who is the most impressive person alive today?
Jocko Willink because discipline equals freedom.
Do you have any ridiculous goals in life?
No silly goals I’m a realist just health and happiness
What food combination do you want to ban?
Not so much a combination, probably a good idea not to eat bats.
